Teff Butterscotch Oat Drops Share

What you need

  • 1 cup margarine, softened
  • 1/2 cup White sugar
  • cup brown sugar
  • eggs
  • 1 tsp. vanilla
  • 2 cups Teff (I use 1 cup light and 1 cup dark)
  • 2 tsp. xanthan gum
  • 2 cups rolled oats
  • 1 tsp. each baking soda, baking powder and salt
  • 2 cups butterscotch chips (can substitute chocolate chips)

How to make it

  1. Combine margarine and both sugars in bowl.
  2. Cream well. Beat in eggs one at a time then add vanilla.
  3. Measure in remaining ingredients and mix.
  4. Drop by spoonfuls onto ungreased baking sheet. Bake at 350 degrees for 8 to 10 minutes.
  5. Makes 6 dozen
